Quinoa, cooked 1/4 Cup
Black Beans, cooked 1/4 Cup
Fat-Free Cottage Cheese 2 Tbsp
Corn 2 Tbsp
Low-fat Shredded Cheese, Mexican Blend 1 Tbsp
Mini Bell Peppers 6 Count
Cilantro 1 Tbsp



  • Clean peppers, remove stems and seeds.
  • In large mixing bowl, combine quinoa, black beans, corn, cilantro, cottage cheese and shredded cheese.
  • Using small spoon, scoop mixture into peppers.
  • Garnish with cilantro.
