Ingredients Amount
Eggplant 2 slices
Roma Tomato 2 slices
Light Feta Crumbles 1 ounce
Olive Oil 2 tsp
Balsamic Vinegar 2 tsp
Fresh Basil (Optional) as desired



  • Heat grill or grill pan to medium heat
  • Spray or lightly brush olive oil onto eggplant slices, covering both sides
  • Grill for 1 minute per side or until tender
  • Move to plate, top with sliced tomato, light feta, balsamic vinegar drizzle, and garnish with basil if desired.
