Recipe Serves: 6-8

Serving Size: 1/2 cup

Ingredients  Amount
Spaghetti Squash 1
Dried Parsley 2 Tbsp
Garlic 4 Cloves
Parmesan Cheese To garnish
Fresh Parsley To garnish

 

Instructions

  1. Poke holes in spaghetti squash using fork to allow steam to escape.
  2. Microwave spaghetti squash on a microwave-safe plate for 5 minutes on one side. After 5 minutes, flip spaghetti squash over and microwave for 5 more minutes.
  3. Allow squash to cool for safe handling.
  4. Cut squash in half lengthwise. Scoop out seeds using a spoon.
  5. Run a fork down the inside of the squash lengthwise to scrape out the contents into bowl.
  6. Mix in minced garlic and parsley, garnish with fresh parsley and Parmesan cheese if desired.
